“Award Winning” Vegan Brownies

My new favorite sweet treat— Classic, decadent, super rich!

Ok, ok so maybe they didn’t offically win any awards but I believe they would win against most brownies and you’d never be able to tell they’re dairy-free! Justin questioned who gave me the award smh..but I think they deserve a gold medal 🥇 and he agreed after he tried one 🤝 I hope you agree!

“Award Winning” Vegan Brownies

(makes a dozen brownies)

Ingredients:

-1/2 cup cocoa powder
-1/2 cup coconut flour (coconut flakes blitzed into a flour)
-1/2 cup oat flour
-1/2 tsp baking powder
-1/4 tsp cinnamon
-1/4 tsp salt
- flax egg (2 tbsp flaxmeal whisked with 6 tbsp water)
-1/2 cup agave
-1/2 cup nut butter (I used chunky peanut butter)
-2 tbsp + tsp olive oil
2 tbsp non-dairy milk
-1/2 cup chocolate chips (divided)

Instructions:
1. Preheat oven to 350F and lime a 8”x8” baking tray with parchment paper.
2. Make your flax egg in a small bowl and set aside. In the mean time place all of your dry ingredients in a large bowl including the cocoa powder, flours, baking powder, cinnamon and salt. Stir to combine.
3. Add your liquids to a separate bowl including your nut butter, agave, flax egg, and milk. Whisk.
4. Add 1/4 cup of your chocolate chips to a small bowl with your olive oil and melt in the microwave for 30 sec. Add your melted chocolate and oil mixture to the bowl along with your other liquids and stir to combine.
5. Next add your liquids into your bowl of dry ingredients and stir until a thick batter is formed.
6. Scoop batter into your baking tray, spread evenly, too with the rest of your chocolate chips and place in the oven.
7. bake for 30-32 min or until toothpick or knife comes out clean. Don’t over bake!
8. Allow it to cool for at least 10min, cut into squares and enjoy!
