Super Seedy PEanut Butter GRanola Bars

 

These simple no-bake granola bars are made up of toasted oats, almonds & flaked coconut, a lot of seeds, peanut butter, and dates. They are nutty, rich, chewy, and super nutritious!

They are packed with fiber and protein making them a great pre/post workout snack or anytime snack! I’ve really been enjoying these bars after a long run or to enjoy as I wind down with a good book and cup of tea.

These bars come together relatively quickly and there is no baking required (besides the toasting of the oats, almond and coconut) and they keep in the freezer for weeks!.. You can reach for these whenever you need a little extra energy or sweetness in your day.

Super Seedy Peanut Butter Granola Bars

Ingredients:

1 1/2 cups oats

1/2 almonds, roughly chopped

1/2 cup coconut flakes

2 tbsp flax meal

2 tbsp hemp seeds

2 tbsp sesame seeds (or chia seeds)

2 tbsp pumpkin seeds (or sunflower seeds)

1 cup packed medjool dates

1/4 cup peanut butter (or nut butter)

2 tbsp maple syrup or agave

1/2 tsp cinnamon

pinch of salt

Instructions:

Preheat your oven to 350 F.

Line a baking sheet with parchment paper and evenly spread your chopped almonds and oats on the tray. Bake for 10 minutes, remove from the oven to toss and to add your coconut to the tray. Bake for another 5-7 minutes, until the oats, almonds, and coconut are golden. Set aside to cool.

Next, add the dates to a blender or food processor, and blend until small bits remain and the dates have formed a gooey, dough consistency.

To a large bowl, add your toasted oats, almonds, and coconut, seeds, flax meal, cinnamon and salt.

In a saucepan heat your peanut butter and maple syrup over low heat. Add your dates and stir until a tough and sticky paste forms. Add your peanut butter date paste to the oat mixture. The dough will be sticky so you may have to use your hands to incorporate the two mixtures evenly.

Transfer to an 8”x8” baking dish lined with parchment paper. Evenly and firmly press the dough in the dish. I like to place another sheet of parchment over the dough and press down really firmly with my palms or bottom of a jar to pack the dough really tight. Place in the freezer for 30 minutes to an hour. Remove from the freezer and cut into bars. Store in an airtight container in the freezer for up to two weeks. Enjoy!
