Pickled Red Onion—

A quick pickle! Pickled red onion— I’ve been really feeling this addition to the tops of my meals! Tastes great in salads, on top of tacos, sweet potatoes, etc! Tangy, slightly sweet, and super quick.. give it a go if you desire!

Quick Pickled Red Onion/// (makes 8oz)

1 red onion, sliced thin

1/2 cup red wine vinegar

1 tsp salt

1 tsp coconut sugar (or cane sugar)

Add all the ingredients to a large bowl and massage with your hands until the onion is soft! Taste and adjust sweetness/saltiness to your liking. Store in a jar or air tight container in the fridge.
