Golden Winter Salad
This salad is made up of roasted and heavily spiced cauliflower, golden raisins, crisp radish, pickled red onion, toasted pumpkin seeds, and a dijon lemon vinaigrette. A simple and perfect winter salad.
The main component in a lot of my salads in roasted cauliflower. I find it to be the perfect vegetable alongside crisp greens due to its versatility alongside other flavors, plus it can be heavily seasoned and roasted. I love adding a sweet and sour component alongside the silkiness of the flavors and texture of the roasted cauliflower.The flavors in this salad are perfectly balanced between the warming spices that coat the roasted cauliflower, the sweetness of the golden raisins, and the tartness of the pickled onion. Golden Winter Salad
(serves 2)
Roasted Cauliflower:
1/2 large cauliflower head, chopped
2 cloves garlic, minced
2 tbsp olive oil
1/2 tsp turmeric
1/2 tsp chili powder
1/4 tsp cumin
1/4 tsp cinnamon
1/4 tsp cardamom
1 tsp cumin seeds
Pickled Red Onion:
1/2 red onion, thinly sliced
2 tbsp white vinegar
2 tbsp water
1/4-1/2 tsp salt
Lemon Dijon Dressing:
1/3 cup olive oil
1 tbsp maple syrup
1 tbsp dijon mustard
2 tbsp apple cider vinegar
1 clove garlic, finely minced
juice from 1 lemon
1/2 tsp cumin seeds
other ingredients:
4-6 cups kale, roughly 1 big bunch, chopped into bite-size pieces.
4 radishes, thinly sliced
1/3 cup golden raisins
1/3 cup pumpkin seeds, toasted
Instructions:
Preheat your oven to 400F and line a baking sheet with parchment. Add your chopped cauliflower and coat the pieces in the spices, garlic and olive oil. Bake for 25-30 minutes. At the 20 minute mark, toss your cauliflower and add in your 1/3 cup golden raisins. The cauliflower and raisins will be done with they are golden and browned. Set aside to cool.
To make your pickled red onion, add your thinly sliced onion, vinegar, water, and salt to a small pot. bring to a boil, stir, then turn off the heat and allow it to cool uncovered.
Prepare your dressing by adding all of your dressing ingredients into a jar and shake! (or whisk in a small bowl!)
Toast your pumpkin seeds in a pan over medium heat for 4-6 minutes. Toss frequently until golden brown.
To a large bowl, add your chopped kale and radish to a large bowl and massage with 1/2 the dressing. Add in your roasted cauliflower and raisins, pickled red onion, and toasted pumpkin seeds. Drizzle with more dressing if you desire!
