Tahini + Dark Chocolate Energy Bites
I’m the kind of person that needs to eat breakfast, lunch, and dinner or else I’ll get light-headed and a little cranky.. lol. Most days— especially on days I go to the gym or go on a long run, I tend to reach for a snack to keep me satisfied until the next meal. My go-to snacks are an apple, cashews + dates, or homemade energy bites! Recently I’ve been making these Tahini + Chocolate Chip Energy Bites and they are perfect for a mid-morning or mid-afternoon snack. They are mighty, energy-boosting little bites packed with protein and fiber! Rich, subtly sweet and so simple!
Tahini + Dark Chocolate Energy Bites
(makes 12 energy bites)
1 1/3 cup oats
1/2 cup coconut flakes
6 tbsps tahini
1/4 cup agave
6 deglet dates
2 tbsps pepitas
1/2 tsp cinnamon
Pinch of salt
1 1/2 tsp maca (optional)
1/4 cup non-dairy dark chocolate chips
In a food processor, pulse all of the ingredients except the chocolate chips. Once the mixture forms a smooth dough-like consistency, add in the chocolate chips and pulse until chips are just incorporated, making sure to not make them too fine. Using a tablespoon or your hands, form your dough into tablespoon-size balls. Place in the freezer and allow them to firm up for at least 2 hours. Keep them stored in the freezer, grabbing them whenever you need a boost of energy or get a hankering for a sweet snack! ;) enjoy!
