Edamame + Avocado Mash with Pear on Toast

This edamame mash is a simple and nutritious topping for those days when you are craving something savory on toast and isn’t just avocado. Although a simple avocado toast is great, sometimes you want something a little more filling and flavorful. This mash is a great option for those kind of days. It’s savory, nutty, zingy, and subtly sweet and spicy. Who knew so much flavor could be packed onto one slice of bread??

Edamame is a great source of protein, fiber and is super rich in antioxidants and vitamin K. This nutrient-dense bean paired with the healthy fats from avocado will provide you with a wholesome lunch that will leave you satisfied. This mash is more than just nutrient-dense, it is also full of flavor. The tahini and miso alongside the lime and pear is such a dynamic flavor combo that makes this mash so unique.

Edamame + Avocado Mash w/ Pear on toast

(serves 1)


1 slice of crusty bread, toasted
1/4 cup edamame
1/4 avocado
1/2 lime, juiced
1 tsp miso
1-2 tsp tahini
1/2 pear, thinly sliced
Dash of red pepper flakes
Sprouts or greens

Instruction:

In a medium bowl mash the edamame and avocado together until you have a even mash with some beans remaining. In a separate bowl add your miso, lime juice, and tahini and stir until smooth. Add to your mash and stir.

Evenly spread your mash on a slice of toasted bread and top with your thinly sliced pear, red pepper flakes, and sprouts.
