Dark Chocolate + Cashew Oat Bars

If you’re looking for a satisfying snack or sweet treat to have on hand, these Dark Chocolate Oat Bars are such a solid option. They are simple to make and quite similar in flavor of a brownie. However, these bars are way more nutritious and have a chewier, complex texture. The whole oats and chopped cashews make these bars extra filling, while the cocoa powder, cacao nibs, and chocolate chips give them the richness to satisfy a craving for something sweet. Plus..it’s getting awfully close to Halloween and these bars would be a great option to have on hand as a healthier treat alongside your classic halloween candy!
Dark Chocolate + Cashew Oat Bars
Ingredients:
2 1/2 cups old fashioned oats
1 cup cashews, roughly chopped
1/2 cup cocoa powder
1/2 cup + 2 tbsp oat flour (oats blitzed down to a fine flour)
2 tbsp chia seeds
2 tbsp cacao nibs
1/3 cup non-dairy dark chocolate chips
1/2 cup coconut oil, melted if solid
1/2 cup agave or maple syrup
1/2 tsp cinnamon
pinch of salt
Instructions:
Preheat your oven to 350 degrees F and line a 9”x13” baking pan with parchment paper.
Roughly chop your cashews, then add them to a a large bowl along with your other dry ingredients and stir. Add your agave and coconut oil to the dry ingredients and give it a good toss until the agave and oil is evenly incorporated into the mixture.
Evenly spread your mixture into the baking pan and firmly press down until you have an even layer.
Place it in the oven for 20-25 min. Allow it to cool and harden for at least 10 minutes before cutting into squares.
Store your bars in an airtight container.
