“Dressed” Chickpea Salad Sandwich
—all dressed up 👠👗🎩 I bought a dense whole wheat loaf of bread from the co-op the other day and made a real nice and filling lunch with it today. I spread a simple chickpea salad on top and dressed it up with some sliced tomato, avocado, pickled red onion, arugula, and a squeeze of lemon. It was satisfying and simple. A great alternative to the typical avocado toast.
“Dressed” Chickpea Salad Sandwich
(serves 1)
1/3 cup cooked chickpeas, smashed
1 tbsp tahini
1 tsp dijon
1/8 tsp paprika
1/8 tsp turmeric
juice from 1/4 lemon
2 tbsp parsley, finely chopped
salt and pepper to taste
Topping:
1/2 small tomato, sliced
1/4 avocado, sliced
2 tbsp pickled red onion
handful of arugula, or green of choice
*all toppings are totally optional! Add whatever you desire. I think sauerkraut, capers, toasted pumpkin seeds, sprouts or a few dashes of hot sauce would also be great additions to this sandwich.
Smash your chickpeas with the back of a fork until a smooth but slightly chunky texture remains. FIrst, add in your tahini and dijon and give it a stir. Next mix in your spices, salt and pepper and lemon juice. Chop your parsley fine and throw that in as well. Stir it all up until you have a thick texture that will be spreadable. Taste and adjust with more salt, pepper, spices or lemon juice. Spread onto two pieces of sturdy toast and add your toppings and an extra squeeze of lemon and dash of salt and pepper. Enjoy!
