Spiced Cauliflower + Tempeh Salad w/ Tomato, Peas, and Raisins
I usually prefer a warm salad over a cold one— my go-to formula for making a satisfying warm salad is a sautéed vegetable, marinated protein, a dried or fresh fruit, fresh herbs, and type of green.
I’ve made a lot of salads similar this this one but this one came together just right. For this salad I used my usual Turmeric Fennel marinade to simmer the tempeh and cauliflower in. I made enough of the marinade to create a paste-like sauce which
I also added simmered the peas, tomato, and raisins in. The turmeric, cumin seeds, fennel seeds, cinnamon, and raisins give the broth a perfect rich, sweet, and aromatic flavor. The warm cauliflower, tempeh and other goods sit all on top of a bed of kale and cilantro massages with lime, salt and pepper. I added some pepitas on top for a little texture. A perfect lunch or dinner!
Spiced CauliFlower Tempeh Salad With Tomato, peas, Raisins
(Serves 1)
1/2 cup chopped cauliflower
1/3 block tempeh, cubed
2 cloves of garlic, minced
2 tbsps vegetable broth in addition to the 1/4 cup broth used in the marinade recipe
1/2 tomato, cubed
2 tbsp raisins
1/3 cup fresh or frozen peas
2 cups roughly chopped kale or other green of choice
2 tbsp chopped cilantro
1/2 lime, juiced
salt and pepper to taste
2 tbsp pepitas
Add your minced garlic and marinade spices to pan with your 1/4 cup vegetable broth and allow it to simmer until fragrant, about 2-3 mins. Next add in the rest of your marinade ingredients (agave, soy sauce, apple cider vinegar) and whisk with a fork until incorporated. Add in your extra 2 tbsp vegetable broth, cubed tempeh and chopped cauliflower and allow it to simmer, flipping them after they both start to absorb marinade on one side.
Cook until the cauliflower is tender and the tempeh is fully covered in the marinade. Add in your raisins, tomato and frozen peas and simmer for another 3-5 mins. In a bowl place your kale and cilantro. Massage it with juice from 1/2 lime, salt and pepper. Add your warm cauliflower and tempeh mixture and top it with your pepitas. Perfecto!
*This would also be delicious with a drizzle of tahini or a tahini lemon dressing added to the top.
